Hello, I’m Julien Vasseur, a seasoned chef with a passion for both exquisite cuisine and holistic health. Over the years, I’ve had the privilege of working in some of the world’s finest restaurants, where I’ve honed my skills and developed a deep appreciation for the art of cooking.

My culinary journey has been shaped by a profound commitment to health and wellness. I believe that food should not only tantalize the taste buds but also nourish the body and soul. That’s why I meticulously select the freshest, highest quality ingredients and create dishes that prioritize both flavor and nutrition.

Now, I’m excited to embark on a new adventure, offering my services to health retreats around the globe. My goal is to elevate the wellness experience for retreat attendees by crafting wholesome, delicious meals that promote vitality and well-being. Whether it’s designing vibrant plant-based menus or reimagining classic dishes with a healthy twist, I’m dedicated to inspiring others to embrace a healthier lifestyle through the joy of food.

Food

I cater for groups up to 30 by myself. For larger groups up to 200 additional staff is required and additional fees are incurred.

Food can go any direction as per organizers request, we specialize in many types of cuisines including Europeean, SE Asian, South american, vegan, raw, buffet style, a la carte etc..

Menu

We prefer using organic, local and seasonal ingredients as much as possible, this means we will create your menus around what can be sourced on location at that particular time of the year. Menus are tailor made for each retreat and can be altered to suit any participants who might require a special diet due to allergies or food intolerance.

Breakfast buffet

  • Raw fruits platters
  • Fresh juices, smoothies, elixirs and tonics
  • Freshly baked sourdough, macadamia & maple butter, fresh raspberry preserve, Kaya
  • Baked eggs with pickled mushrooms, free range bacon, baby greens and herb salad
  • Bircher Muesli with fresh berries, activated nuts and manuka honey
  • Coffee, tea

Morning snacks

  • Assorted finger sandwiches
  • Ice tea, Kombucha

Lunch

  • Kabocha pumpkin soup with lemongrass, kaffir lime, chili and coriander
  • BBQ fresh snapper with green papaya salad, lime and toasted cashews
  • Crispy home made fried tempeh, green papaya salad, sambal
  • Sticky rice, mango, fresh coconut cream and coconut crumble

Afternoon snacks

  • Bliss balls
  • Kombucha, teas and infusions

Dinner

  • Moroccan tabloulé,
  • Roasted root veggies salad with pesto
  • Baby leaves, white balsamic, EVOO
  • Sweet potato and pumpkin tagine with quinoa and raita
  • Grilled flank steak, mustard greens, black garlic jus
  • Yuzu lemon curd pie, meringue, passionfruit

Location

I am Australia based but can travel and work all over Europe, SE Asia and South/Central America.

Payments

Retreats are quoted on an individual basis split into staffing + food costs.

The costings will take into account of guests, number of meals, staffing requirements, schedule, and dietary requirements.

Extras

Cooking demos / hands on cooking classes are available to your guests as a fun experiential add on to your retreat.
